The grapes of the Grechetto and Falanghina varieties, used for the production of this sparkling wine Martinotti method, come from the highest altitude vineyards on the farm in the part called “i Pini vineyard”.
The grapes are cooled before processing so as to preserve all their aromatic content, immediately after, they are sent to processing in the press with the least possible use of sulphites. The must obtained
it is fermented at a temperature of 13 ° in order to preserve all the typical character of the grapes. In winter, refermentation is carried out in autoclave according to the Martinotti method.
The color is pale straw yellow, very elegant, the aromas are fresh and floral with notes of pineapple, in the mouth it is energetic and pleasant with an enveloping and creamy foam, the sensation given by the CO2 is well dosed and is warm on the palate, the finish is fresh and harmonious.
